Ingredients

1 1/2 lb
chicken thigh meat, cut from bones
1/4 c
diced onion, diced
1/4 c
green bell pepper, diced
2 medium
tomatoes, diced
1 clove
garlic1/4
1/4 tsp
pepper
2 Tbsp
oil
1 Tbsp
flour
1 can(s)
chicken broth
12
flour tortillas, (6 inch size)
shredded lettuce (optional)
shredded mexican blend cheese (optional)
1/2 tsp
chili powder

Step-By-Step

1Cut chicken from bone and shred.
2Heat oil in a skillet. Add chicken, onion, bell pepper, chili powder and garlic. Cook until chicken is done and veggies are tender.
3Add flour and stir to blend. Add chicken broth, tomato and pepper. Stir.
4Cover and simmer for 45 minutes. Strain to serve.
5Serve in 6 inch flour tortillas. Top with shredded lettuce and shredded Mexican blend cheese.
