This is a quick and easy chicken salad that is great in a "wrap". You could also use "craisins" and add pecans for a change, but my recipe is just based on what I came up with one night and had to write it down because it was so darned good!

Ingredients

2 large
chopped cooked chicken breasts
1 stalk(s)
celery, diced
1 medium
red apple, diced

green onions, chopped
1 c
golden raisins
1 small
ripe mango, chopped small
3/4 c
mayonnaise
2 tsp
curry powder
1 tsp
paprika
1 dash(es)
salt and pepper

Directions Step-By-Step

Mix above together and let it sit a bit.

I used this for making "wraps". Add some fresh spinach leaves to a whole wheat tortilla wrap, and bam! Instant lunch/dinner.
