Ingredients

5-6 small
boneless chicken breasts
2 large
eggs, beaten
1 c
crushed pork rinds
1/3 c
parmesan cheese
2 Tbsp
olive oil
1 Tbsp
coconut oil
1 tsp
salt
1 tsp
black pepper

SWEET AND SOUR SAUCE

1/2 c
swerve or sucralose
1/2 c
rice vinegar
4 Tbsp
reduced sugar ketchup
1 Tbsp
soy sauce
1 tsp
garlic powder

Directions Step-By-Step

Cut chicken into cubes Combine all the coating ingredients in a food processor and then coat the chicken by dipping into egg and then into the pork rind crumbs.

Cook chicken in batches in a cast iron skillet over medium heat.

Reduce Sauce in pan while chicken is cooking.

Coat chicken with sauce and mix together.
