What a great way to serve chicken!! Love this recipe and can eat it every night!! :)

Ingredients For herb crusted baked chicken

  • 1 lg
    chicken,cut up into sections,leg,thigh,wings and breast meat.
  • 1 bunch
    fresh rosemary,thyme and flat leaf parsley(small bunches)
  • 1/2 c
    olive oil
  • 2 Tbsp
    sea salt
  • 1 tsp
    fresh black pepper,ground
  • 1 lg
    lemon,1/2 slices 1/2 whole
  • 4 clove
    garlic,minced

  • The skin is crisp with a wonderful flavor combination from the fresh herbs and sea salt and the meat is tender and juicy,amazing!

    Start by rinsing and patting dry your cut up chicken parts,place in a large mixing bowl.(You can buy the chicken already cut up or ask the butcher to cut one up for you,around a three pound bird)

    Season the chicken with the olive oil first,then the sea salt and fresh ground pepper. Squeeze the half of lemon over the chicken and mix together well. Chop the fresh herbs using only the leaves,no stems.Reserve some whole leaves for garnish if you wish.

    Spread out the chicken parts onto a rimmed baking sheet pan,pour the liquid over the chicken then generously apply the fresh herbs all over the surface of the chicken parts. Place the lemon slices all around the chicken.

    Bake in a pre-heated 400 degree oven for 40-45 minutes uncovered. Remove from oven and baste with the juices before serving. This dish goes very well with my pureed cauliflower or mashed Yukon gold potatoes and vegetable of your choice,enjoy!! :)
