Karen's StoryThis was a staple when my mom was dieting, as it's an OLD Weight Watcher's recipe ... doesn't taste like diet food tho'. I have found that it is vastly adaptable as I have also made it with ground turkey, ground chicken, cubed chicken and just a variety of seasonal veggies. As long as you have the basics, be creative.
small yellow onion, diced
lean ground beef (90/10 or better)
canned diced tomatos, with liquid
american cheese slices
salt & pepper
1Cook noodles as per package directions
2While waiting for noodles, lightly sauté onions & celery in water, 2-3 minutes (not quite tender crisp)
3Add ground beef and cook until done
4Add diced tomatoes, with liquid. Reduce heat and simmer (until noodles are done.)
5Drain noodles and add to meat mixture, stirring in completely.
6Place cheese slices on top. Cover until melted. Stir and serve.
