This was a staple when my mom was dieting, as it's an OLD Weight Watcher's recipe ... doesn't taste like diet food tho'. I have found that it is vastly adaptable as I have also made it with ground turkey, ground chicken, cubed chicken and just a variety of seasonal veggies. As long as you have the basics, be creative.

Ingredients

1/2 pkg
egg noodles
1/4 c
water
1/4 c
small yellow onion, diced
1/4 c
celery, diced
1 lb
lean ground beef (90/10 or better)
1x14.5 oz
canned diced tomatos, with liquid
4 slice
american cheese slices
to taste
salt & pepper

Directions Step-By-Step

Cook noodles as per package directions

While waiting for noodles, lightly sauté onions & celery in water, 2-3 minutes (not quite tender crisp)

Add ground beef and cook until done

Add diced tomatoes, with liquid. Reduce heat and simmer (until noodles are done.)

Drain noodles and add to meat mixture, stirring in completely.

Place cheese slices on top. Cover until melted. Stir and serve.
