One of my oldest son's favorite dishes, and enjoyed by my Indian friends as well. The house smells wonderful when this is cooking. Don't let the long list of ingredients discourage you. They're all easy to get and the dish is pretty easy and quick to make.

Ingredients For happy family chicken curry

  • 2 tsp
    vegetable oil
  • 2
    large chicken boneless skinless breast portions, cut into 1 in pieces
  • 1 md
    onion, chopped
  • 6 clove
    garlic, chopped
  • 3 md
    potatoes, peeled and cut into 1 inch pieces
  • 1 md
    red bell pepper, cut into 1 inch pieces
  • 2
    apples, peeled, cored, chopped
  • 2
    tomatoes, peeled and cut into 2 in pieces
  • 1/4 c
    chopped fresh cilantro
  • 1/2 tsp
    ground cumin
  • 3 Tbsp
    curry powder
  • 1/4 tsp
    cayenne -adjust for taste
  • 1/2 c
    raisins
  • 15 oz
    can unsweetened coconut milk
  • 2 Tbsp
    sugar
  • 1 1/2 c
    chicken broth or water
  • 2 c
    plain yogurt
  • ***
    salt and pepper to taste

How To Make happy family chicken curry

    Heat oil in a large heavy pot over medium heat. Add chicken, brown meat.

    To chicken pieces, add cumin, curry powder, cayenne. Stir in raisins.

    Add onion, garlic until onion is translucent, about 5 minutes.

    Add potatoes peppers, apples, tomatoes, ¼ cup chopped cilantro and stir fry but do not cook thru. About 2-3 mins.

    Add sugar, coconut milk and 1 1/2 cups water or chicken stock and bring to a boil. Reduce heat to a simmer and cook, stirring occasionally, until chicken is cooked through and potatoes are tender, about 15 minutes.

    Stir in yogurt and heat through. Add salt and pepper to taste. Serve over rice. Jasmine or basmati rice is also good with this, but any rice will do. I also serve with Naan Indian bread. It's like a fluffier pita.
