A great way to use up little bits of leftovers. This is a recipe I have been using since I was 18 and my family loves it.

Ingredients

1-2 Tbsp
oil or 1-2 tbs bacon drippings
1 c
cooked plain rice
2 tsp
soy sauce
1-2
green onions, sliced including the green tops
1
egg
3 Tbsp
cooked chicken, pork, ham, bacon, or shimp, minced
1/4 - 1/2 c
peas (optional)

Step-By-Step

1Heat oil or bacon drippings in an 8 inch skillet.

2Add rice and stir-fry until rice is hot and mixed with oil or drippings.

3Add soy sauce, mix well. If rice is dry, add 1 to 2 tablespoons water; cover and cook gently until water is absorbed.

4Stir in green onions. Then push the rice mixture to one side of skillet.

5Beat egg separately or break into skillet and quickly scramble with a fork. As egg sets, stir gently to let uncooked egg glow underneath.

6Stir cooked egg into rice, breaking egg into small pieces.

7Now stir in minced cooked meat and peas if using. Heat through and enjoy.
