Ingredients

1 pkg
mexican rice
2 - 3 c
diced chicken breast
1 pkg
taco seasoning mix
1 can(s)
enchilada sauce
2 c
shredded mexican cheese
1 pkg
medium sized flour tortillas
1 bunch
green onions
2 Tbsp
vegetable oil

Step-By-Step

1Prepare the Mexican rice according to the directions and set aside.

2Heat the oil in a skillet and add the chicken. When it's cooked through add some of the taco seasoning and about 2 tablespoons of water. Saute that for just a few more minutes.

3Add the chicken to the rice and mix together. Roll a scoop of the mixture into each tortilla shell and line them up on a baking sheet.

4Pour the enchilada sauce evenly over all of the tortillas and then cover it in the shredded cheese.

5Bake at 350° for 15 - 20 minutes. Serve with chopped green onions and sour cream.
