Cool Chick Salad

This is a healthy version of chicken salad.

2 c
chopped cooked chicken breast
1 c
canned black beans, drained and rinsed
1 1/2 c
diced tomatoes
1 c
whole kernal corn
1/2 c
diced red onions
1/4 c
chopped fresh coriander


2 Tbsp
lime juice
1 Tbsp
olive oil
1/2 tsp
each ground cumin and sugar
1/4 tsp
each salt and black pepper


1Combine first 6 ingredients in a large bowl and mix well.
2In a small bowl, whisk together dressing ingredients. Pour over bean mixture and stir until dressing is evenly distributed.
3Cover and refrigerate until ready to serve.
