Ingredients

5
chicken breast halves, skinless and boneless
1 pt
mushrooms sliced
2 Tbsp
shallots minced
1/4 c
cream sherry
1 c
chicken stock
1 c
half and half
1 bunch
green grapes cut crosswise
1 bunch
green onions finely sliced

Step-By-Step

1Saute chicken until done.
2Then in a sauce pan saute shallots,do not brown. Then add mushrooms,Saute for about 3 minutes and add the sherry wine, simmer for 3 minutes.
3Add chicken stock and Half & half and bring to a boil.
4then add the roux until you get the right thickness. Let cool for 10 minutes and add 1/2 the green grapes and tarragon.
5Place chicken on the plate and pour the sauce over the chicken and sprinkle the green grapes and scallions over the top for garnish.
