This is my version of a recipe found on Pinterest. It's so much easier than traditional Chicken Parmesan and oh so delicious!! And it's easy to adapt based on how many people you're serving. Use 1 chicken breast per person and about 3/4 c. of sauce per chicken breast. This could easily be made in individual ramekin dishes as well. I'd love to tell you it makes great left-overs but there aren't any! My family LOVES this dish! Ingredients For chicken parmesan casserole

  • 4
    chicken breasts, diced
  • 1/2 tsp
    minced garlic
  • 1/4-1/2 tsp
    red pepper flakes
  • 4 c
    pasta sauce (see my other recipes for my homemade sauce)
  • 3 c
    queso chihuahua cheese (or use mozzarella or monterey jack cheese)
  • 1 c
    shredded Parmesan cheese
  • 1 tsp
    Italian blend Mrs. Dash
  • 1 c
    seasoned croutons, crushed (use more or less based on your preference)

How To Make chicken parmesan casserole

    Preheat oven to 350 degrees F. Spray 13x9 glass dish or individual oven-safe bowls with nonstick spray.

    Dice chicken breast and spread along bottom of prepared dish. Sprinkle minced garlic and pepper flakes over chicken.

    In a bowl combine cheeses; spread over sauce in dish. Dust with Mrs. Dash Italian seasoning. Spread crushed croutons on top.

    Bake for about 40-45 minutes until chicken is thoroughly cooked. If you'd like, serve with a salad and garlic bread.
