Chicken in basil-tomato cream sauce

Love, love this chicken dish, it's an old standby recipe I keep on hand for an elegant looking chicken dish. I usually just serve it with a simple salad. The fresh basil really makes it taste wonderful.

Ingredients

1 Tbsp
butter, melted
1/2 c
chopped onion
1
16 oz can whole tomatoes, chopped
1/2 c
light cream
1/2 c
fresh basil, chopped
1/2 tsp
each, salt and pepper

boneless, skinless chicken breasts

Step-By-Step

1Melt butter in lg skillet over medium heat. Add onion, cook for 5 mins. Increase heat to high. Add tomatoes. Cook until liquid is absorbed.
2Add cream. Cook until slightly thickened. Remove skillet from heat. Add basil, salt and pepper, stir to combine. Place chicken in caaerole dish.
3Pour sauce over chicken and bake at 450 for 15 -20 mins, or until chicken is no longer pink inside.
