Chicken Fajita Supreme

My family really enjoys this simple meal and you can change the meat. Sometimes I will use steak stripes instead of chicken, it all tastes great. Can also add sour cream, salsa to it and it really is wonderful.

Ingredients

1 large
red bell pepper
1 large
yellow bell pepper
1 large
green bell pepper
1 large
orange bell pepper
1 large
white onion-chopped
5 lb
chicken breasts-cooked & sliced in strips
1/2 lb
mushrooms-chopped
1 pkg
fajita mix
1/3 c
olive oil
1 pkg
flour tortillas
1 lb
shredded cheese of choice

Directions Step-By-Step

Boil the chicken in a pan first and then add cold water to cool it off. Slice the chicken into strips and place into skillet to brown

Slice all the vegetables and put in skillet to cook. Combine with the chicken when both are cooked. The chicken will be browned, the vegetables soften.

Sprinkle the fajita mix over the vegetables and chicken and stir completely so all is covered with the spice. Let it simmer about 15 minutes and place a ladle full on a flour tortilla. Sprinkle with shredded cheese of choice. I use pepper jack. Roll like a burrito or just half it and enjoy.
