Chicken Cheddar Quinoa casserole bake

Always on the look out for tasty ways to use quinoa, I found a recipe from Gina Matsoukas and gave it my own spin. This recipe is a comforting casserole made with less guilt. :) If you havent tried Quinoa yet, give it a go! You will realize that this mighty grain can replace rice in many dishes as well as having so many culinary uses. This recipe turned out so yummy I wanted to share it with my Just A Pinch friends.

Ingredients

2 c
cooked, chopped chicken meat
2 c
prepared quinoa (see note)
1 1/2 c
shredded cheddar cheese, divided
1 tsp
montreal chicken seasoning
8 oz
tomato sauce
1
tomato, chopped
1 clove
garlic, minced
1/4 c
onion,chopped
1 Tbsp
olive oil
1 c
broccoli,cooked

Step-By-Step

1Preheat oven to 375 degrees. Grease an 8x8 baking pan, or 1 1/2 quart baking dish.
2In a skillet, saute onion and garlic until transparent.
Add the chopped tomato,tomato sauce and Montreal chicken seasoning. Stir and simmer for 5-7 minutes.
3In a separate bowl, combine chicken,quinoa, broccoli and 1 cup of cheddar cheese. Season with salt and pepper to taste.
4Now add your simmered tomato sauce to the chicken quinoa mixture. Toss gently to combine.
Transfer into your baking dish.
Top with remaining 1/2 cup of cheddar cheese.
Cover with foil and Bake for 15 minutes.
Remove foil and bake for an additional 10 minutes to melt cheese on top.
5TO MAKE QUINOA:
Measure out 1 cup of qunioa. To a pot, add 2 cups of water and 2 chicken bullion cubes. Bring to a simmer, and add the quinoa. Cover and simmer over low heat for 15 minutes. Fluff and let cool.
