This is an amazing casserole! This is hearty, creamy and bursting with flavor from chunks of bacon throughout the dish. The bacon, ranch and cheese combo is perfect. The pasta is cooked al dente so it stays nice and firm in the baking process. The cheesy bacon topping is perfect enough but adding the French fried onions makes this amazing. This will be a hit for a potluck... trust me it will disappear.

Ingredients

1 box
penne pasta, 16oz
2 lb
boneless skinless chicken breasts, cut into bite sized pieces
1 tsp
Hidden Valley Ranch dressing mix powder
1 large
onion, diced
1 c
mayo, regular or light
1 c
sour cream, regular or light
3/4 c
milk
3 Tbsp
Hidden Valley Ranch dressing mix powder
1 lb
bacon, cooked crisp and crumbled
2 c
shredded cheddar cheese
1 1/2 c
French fried onions, French's

Step-By-Step

1Cook your penne according to package directions to al dente. Preheat oven to 350 degrees.

2While your pasta water is coming to a boil, cook your cubed chicken seasoned with 1 tsp ranch dressing powder over medium heat until no longer pink.

3Cook your diced onion in a separate pan until soft and translucent.

4While pasta is cooking, mix together in a bowl the mayo, sour cream and 3 tbsp of ranch dressing mix.

5Stir in half of crumbled bacon and one cup of the shredded cheddar cheese.

6In large mixing bowl, mix pasta, chicken and onions.

7Add in mayo mixture. Combine thoroughly.

8Pour in milk and mix completely.

9Pour mixture into a 13 x9 casserole dish.

10Top with other half of bacon and one cup of cheddar.

11Cook at 350 degrees for 20 minutes.

12Remove from oven and top with the French fried onions.

13Return to oven for 10 minutes until hot, bubbly and French fried onions are golden. Enjoy!
