Trying to figure out what to make for dinner one night and just threw this together with items I had on hand. Didn't expect the reaction I got from the kids! They loved it so much it's become a favorite!
Cook your penne according to package directions to al dente. Preheat oven to 350 degrees. While your pasta water is coming to a boil, cook your cubed chicken seasoned with 1 tsp ranch dressing powder over medium heat until no longer pink. Cook your diced onion in a seperate pan until soft and translucent.
While pasta is cooking, mix together in a bowl, the mayo, sour cream and 3 tbs. of ranch dressing mix. Stir in half of crumbled bacon and one cup of the shredded cheddar cheese.
In large mixing bowl, mix pasta, chicken and onions. Add in Mayo mixture. Combine thoroughly. Pour in milk and mix completely. Pour mixture into a 13 x9 casserole dish. Top with other half of bacon and one cup of cheddar.
Cook at 350 degrees for 20 minutes. Remove from oven and top with the french fried onions. Return to oven for 10 minutes until hot, bubble and french fried onions are golden. Enjoy!
