Ingredients

1 lb
boneles, skinless chicken breast
1/2 c
italian seasoned bread crumbs
2
eggs, beaten
2 Tbsp
olive oil
4 Tbsp
butter, melted
1 lb
mushroom, sliced
2 c
chicken broth
1/2 c
white wine
2 Tbsp
flour
1/2 c
shredded mozarella cheese

Step-By-Step

1Pound chicken breasts to desired thinness. Dip chicken breasts in eggs and dredge in bread crumbs on both sides.
2Saute breasts in olive oil; set aside.
3Saute mushrooms in melted butter and add broth and wine to mushrooms and bring to a boil.
4Put chicken breasts in baking dish.
Pour wine sauce and mushrooms over chicken.
5Marinate overnight in refrigerator or if baked immediately, you may want to thicken sauce with flour.
6Bake chicken at 350 degrees for 35-40 minutes.
7Sprinkle cheese over chicken 5 minutes before chicken is done, until melted.
8Serve with rice or noodles.
