African Style Chicken and Vegetables

This was inspired by a recipe for African Beans with a coconut-tomato sauce which we liked very much.

Ingredients

1 lb
chicken breasts, boneless and skinless
1 medium
zucchino
1 medium
eggplant
1
red bell pepper
1
yellow bell pepper
1 clove
garlic
1
shallot
1 medium
tomato
1 medium
sweet potato
2 Tbsp
tomato paste
1 tsp
ground cumin
1 tsp
paprika, sweet mild
1/2 tsp
chili or cayenne
1/4 tsp
black pepper
1 can(s)
creamy coconut milk, unsweetened
1 tsp
salt
1 Tbsp
brown sugar

Step-By-Step

1Cube the chicken and brown with a tablespoon of coconut oil or other cooking oil in a large skillet.

2While meat is browning, chop shallot and mince garlic, cube all the vegetables.

3Remove the browned chicken from skillet and fry shallot and garlic until lightly brown, add spices, sugar and tomato paste, stir until sugar has melted and add cubed tomato.

4Fry for two minutes, then add cubed sweet potato, fry two more minutes, then add all the other vegetables and the salt. Fry for two or three minutes, then add coconut milk.

5Bring to a boil, cover and boil for 15-20 minutes or until sweet potatoes are soft.

6Add chicken, mix well, heat through and then serve.
