Because I hate to go to the supermarket and because Bubba wants a home cooked meal, there are times when I have to make due with whatever is in the pantry. This is one of those make due recipes.

Ingredients

1 1/2 lb
ground buffalo
1 c
sliced celery
1/2 c
chopped onion
1/2 c
chopped green bell pepper
1 clove
garlic, minced
3/4 c
tomato paste
3/4 c
water
1 tsp
salt
1 tsp
paprika
1 can(s)
pork and beans
1 1/2 c
flour
1/2 tsp
salt
2 Tbsp
baking powder
1/4 c
butter
1/2 c
milk

Step-By-Step

1Preheat oven to 375 degrees.
2Sauté ground buffalo, celery, onion, bell pepper, and garlic in a large cast iron skillet. Drain.
3Add tomato paste, water, salt, and paprika. Reserve 1 cup for biscuits. Add pork and beans. Simmer while preparing biscuits.
4Sift flour, salt, and baking powder into a large bowl.
5Cut in butter. Add milk. Stir until dough clings together.
6Knead on floured board 12 times. Roll out to 12x9-inch rectangle.
7Place 1 cup reserved meat mixture on dough. Roll up, starting with the 12 inch side. Seal edge.
8Cut into 1 inch pieces. Turn meat mixture into a 9x13 inch baking pan. Top with biscuits. Bake until hot and biscuits are golden brown, about 10 to 12 minutes.
