i wanted a turkey pot pie, but one that wasn't so fattening, so i used phyllo dough as a crust. Delecate and flaky! Calories: 134 per serving

Ingredients

thick slices deli turkey, cubed
2 c
frozen mixed veggies, thawed
8 oz
sliced mushrooms
1 c
frozen, diced potatoes, thawed
1 Tbsp
canola oil
2 Tbsp
flour
1 c
chicken broth
3/4 c
chicken broth
1/2 tsp
dried thyme
1/4 tsp
each, salt & pepper

sheets phyllo dough, thawed

Directions Step-By-Step

Heat oven to 400. Spray a 9" x 13" baking dish w/ cooking spray. In lg bowl, combine turkey, mixed veggies, mushrooms and potatoes.

In saucepan, over medium heat, heat oil. Add flour, cook 1 min, whisking constantly. Stir in broth, thyme, salt and pepper. Heat until thickened.

Pour over turkey mix, mix well. Spoon into baking dish. Coat 2 sheets of phyllo dough w/ cooking spray, place on top of turkey mix. Repeat w/ remaining dough. Bake 30 mins.
