I have been making this recipe for many years. It is one of my hubby's favorite meals. We love sweet potatoes so when I decided to add them as well as white potatoes, it was a total hit! I have been making it this way for a long time now. The sweet potatoes add a wonderful flavor to the beef. Make this for your family and watch them clean their plates...Enjoy!!!

Ingredients For two patootie pot roast

  • 2 lb
    beef chuck roast
  • 1/2 lg
    sweet onion cut into chunks
  • 2 or 3 md
    sweet potatoes..i used 3, cut into chunks
  • 2 lg
    idaho or yukon gold potatoes cut into chunks
  • 4 md
    carrots cut into chunks
  • 2 Tbsp
    oil
  • 3/4 c
    flour..save 1/4 c. for the thickening
  • 1 tsp
    black pepper
  • 1/2 tsp
    garlic powder
  • 1 tsp
    seasoned salt
  • 1/2 tsp
    basil
  • 3 Tbsp
    better than bouillon beef paste
  • 4 c
    water
  • 2 Tbsp
    worcestershire sauce
  • 1 tsp
    kitchen bouquet browning sauce

How To Make two patootie pot roast

    Place the flour into a shallow pan and add the salt, garlic, and pepper...stir well and add the beef and coat with 1/2 c. of the flour mixture.

    Heat the oil in a 5 qt. dutch oven until hot. Add the beef and brown on both sides. Mix the bouillon and hot water until dissolved.

    Add the onion, white potato chunks and bouillon mixture to the pan. Add the basil and bring to a boil. Lower heat to a simmer and cook for about 2 hours. After the beef becomes tender, add the sweet potato chunks and continue to cook for an additional 30 minutes until the potatoes are tender.

    I remove the meat and vegetables to a 9x13 casserole dish while I thicken the gravy...this helps prevent the potatoes from being broken up while you are stirring. Whisk the remaining 1/4 c. of seasoned flour with 1/2 c. of cool water until smooth. Add the thickening and Kitchen Bouquet to the broth in the dutch oven, stir well, and simmer until thickened. I spoon some of the gravy over the beef and vegetables in the casserole dish and serve the remaining gravy on the side.
