Ingredients

32 oz
frozen tator tots ( get the extra crispy)
3-4 slice
bacon
1/2
onion finely chopped
3 clove
garlic minced
1 lb
very lean ground beef
1 Tbsp
chili powder
3/4 tsp
ground cumin
1/2 tsp
paprika
1/2 tsp
cayenne pepper
1/4 tsp
oregano, dried
1/2 tsp
salt
1/2 tsp
black pepper
15 oz
jar salsa con queso/cheese sauce, heated in microwave
Amount
salsa
guacamole
sour cream
several green onions finely chopped

Directions Step-By-Step

Prepare the tator tots as directed on the package. I like very crispy so I baked them to very crispy.

While the tots are baking, fry the bacon until crisp. Remove and set aside to cool. Only leave about 1 Tbls of bacon grease in pan.

Add the onion and garlic to pan. Cook over medium heat until softened.

Add the beef and stir to mix. Once the beef is no longer pink, add all the dry ingredients

Cook to incorporate. I cooked about 15 mins on very low heat (simmer)

Once the tots are done, transfer them to a platter. Top with the seasoned beef, salsa con queso, salsa, guacamole, sour cream and green onions

Crumble the bacon over the top and serve immediatly.
