Southwest Mac with Beef

Very easy recipe! So cheesy and Yummy. I catered my 25th class reunion in September and this was the 1st thing that they asked for. This is always eaten so fast that I don't have time to take a photo of the finish product. I will add it at a later date.

Ingredients

2 lb
ground beel
16 oz
large elbow macaroni
1 lb
velveeta cheese
1 c
each, bell pepper & onion (diced)
16 oz
half and half
1 can(s)
rotel tomatoes
4 Tbsp
butter
8 oz
shredded cheese

Step-By-Step

1Boil macaroni according to package instructions, drain, rinse with cold water and drain again. spread in a lasagna pan and set to the side.
2Brown ground beef with bell pepper and onion. Drain. Spread across the macaroni and set to the side.
3Preheat oven to 350.
4Add Velveeta (diced) and Rotel to a bowl and microwave for 3 minutes. Stir, add the butter, half & half and microwave for 5 minutes.
5Spread melted cheese mixture over the beef & macaroni and stir until all is mixed thoroughly.
6Top with shredded cheese and bake for 20 to 30 minutes. Serve.
