I'm married, a mom (which includes being a karate mom, a dance mom and a volleyball mom), a full-time paralegal in a family law firm - I AM TIRED. So when we get home and before we take off again to another class, rehearsal, recital, game or practice, we need to eat something hot, good, and quick!
FOR BEEF ROAST: In the morning, put roast in slow cooker, sprinkle soup mix in and then pour water over all. Set cooker on LOW, put lid on (I have forgotten this before! LOL) and cook for 6 to 8 hours.
When home again, pour off juice from roast and refrigerate juice to bring fat to top and remove fat. Shred the meat.
Mix all BBQ Sauce ingredients together and simmer 10 - 15 minutes; be careful not to scorch or burn.
Add sauce to meat and heat through. Serve as is or on buns for sandwiches.
