Method:

Stove Top

Ingredients

2 Tbsp
olive oil
2 lb
chuck roast - fat trimmed and cut into 1 1/2 inch cubes ( or can use stew meat )
salt
salt and pepper
garlic powder
1 - 10 oz
cream of mushroom soup
1 - 8 oz
mushrooms, cleaned and sliced - optional - i didn't use this time
1 c
dry sherry
1 pkg
liptpn onion soup mix
1/2 - 1 tsp
thyme
1 clove
garlic, minced
1/2
soup can water
1/2
soup can sherry
kluski noodles, prepared - you could use egg noodles or rice

Directions Step-By-Step

1
Season beef with salt, pepper and garlic powder.
2
Heat the olive oil in a heavy dutch oven or large skillet. Add the beef and brown on all sides. Stirring occasionally.
3
In the meantime, in a medium sized bowl, mix the soup with the onion soup, thyme, minced garlic and 1 cup of sherry.

Using empty soup can, fill halfway with Sherry and once beef is finished browning; deglaze the pan with the sherry, scraping all those yummy bits from the bottom of the pan.

Now, add a half can of water to the soup mixture and whisk. Pour the mixture into the pot with the beef, stir to combine.

Bring to a boil, then place lid on the pot and slow simmer for an hour or until beef is tender. Mine was ready in 1 hour. ( if adding mushrooms, do so when there is about 30 minutes left of cooking).

Taste the sauce, season more if needed.
4
Now, pour a ladle of beef and gravy over hot noodles, maybe sprinkle with parsley or sliced green onions.

Enjoy this delicious comfort meal.
