Mexican meatloaf

A great cinco de mayo meatloaf makeover. Not too spicy, but you can add more chili powder to your taste.

Ingredients

2 lb
lean ground beef or ground turkey
1
14-1/2 oz can stewed tomatoes with chiles
1 c
bread crumbs
1
onion, chopped
1/2 c
egg beaters
1-1/2 tsp
ground cumin
1 tsp
chili powder
1 tsp
minced garlic
1/2 tsp
each, salt and pepper

Step-By-Step

1Heat oven to 350. Spray a 9" x 5" loaf pan. In lg bowl combine all ingredients, mix well.
2Place mix evenly into pan. Cover w/ foil, bake 50 mins. Uncover, bake 10 mins.
