I came up with this recipe after talking to my uncle about his days of traveling around Texas as a teenager during the Depression. He told me about smelling the most wonderful smells from a couple of miles away, and tasting the terrific stews, that he said you didn't want to ask what was in it. This tastes great served with cornbread, and you can also use boneless chicken breast or thighs Enjoy and let me know what you think.

Ingredients For hobo packets

  • 1 large pieces of foil cut into fourths
  • 1 1/2 lb
    beef stew meat cut into bite size pieces
  • 2
    large baking potatoes diced
  • 1 c
    chopped onion
  • 2
    large carrots chopped
  • 1 c
    froze peas
  • 2
    chopped green onions tops too
  • 1 c
    shredded cheddar cheese
  • 2 Tbsp
    oil
  • salt and pepper

How To Make hobo packets

  • 1
    heat the oil in a pan. Salt and pepper the meat and brown it in the oil. Set aside.

    cut the foil in to four equal pieces.
  • 3
    mix the veggies together and add the meat
  • 4
    divide everything between the foil and fold into packets
  • 5
    place the packets on a cookie sheet, and bake at 375 for 30 minutes
  • 6
    carefully open the packets and top with cheese. Close the packets back and let stand 5 minutes until the cheese melts
