My son in laws mom gave this recipe to me and I loved it! It is a little spicy, but that's what made it taste so good, and the meat was so tender.

Ingredients For easy mexican-style pot roast

1 Tbspcanola oil

13 lb boneless beef chuck roast

114.5 oz can whole tomatoes, undrained, chopped

14 oz can chopped green chiles

1envelope taco seasoning

1beef bouillon, crushed

1 Tbspbrown sugar

2 Tbspwater
-
1 Tbspcornstarch
How To Make easy mexican-style pot roast

1In lg pot, heat oil over medium heat. Brown roast on all sides. In bowl, combine tomatoes w/ their juices, chiles, taco seasoning, bouillon, and brown sugar.

2Pour mix over roast. Reduce heat to low. Simmer 3-3-1/2 hrs, or until meat is fork tender. Remove roast to platter, keep warm.

3In measuring cup, whisk together water and cornstarch. Pour into pot. Stir until it thickens. Serve sliced roast w/ sauce.
