Offered as part of my Ground Beef Favorites Collection from First Ladies. This is purported to be the favorite recipe of a wife of a Governor, United States I found these recipes in an old cookbook which has no name or any identifying labels.

Ingredients For crazy meatloaf

110 oz pkg. frozen mixed vegetables

1/4 cbutter
-
1 mdonion, chopped
-
2 csoft bread crumbs

1/4 cchopped parsley
-
1/4 tspsalt
-
1/4 tspthyme, dried
-
3/4 tsptobasco
-
1 lgegg, slightly beaten
-
1/2 cmilk
-
1/2 tspbasil, dried
-
1 1/2 lbground chuck
-
1 cgrated cheddar cheese
How To Make crazy meatloaf

1Cook mixed vegetables for 5 minutes in boiling salted water; drain. Melt butter in skillet; add onions and cook until tender but not browned.

2Add bread crumbs, parsley, 1/4 teaspoon salt, thyme, and 1/4 teaspoon tobasco. In a mixing bowl,combine egg, milk, remaining salt, basil, and remaining tobasco.

3Add 1 cup of bread crumbs to egg mixture; mix well. Gently blend ground chuck into bread crumb / egg mixture. Handle as little as possible for more tender meat.

4Gently press all but 2 cups of meat mixture over bottom and 3/4 up the sides of a 9x5x3 loaf pan, leaving center hollow.

5Combine remaining bread crumb mixture with mixed vegetables and grated cheese; turn into hollow space in loaf pan. Cover with remaining meat mixture.

6Bake at 350 F oven for 1 hour. Let stand for 10 minutes before turning out onto serving platter. Serve with cheese sauce if desired.
