I love one-dish meals. This one is especially easy and delicious served with a green vegetable or salad.

Ingredients

2 Tbsp
oil
1 1/3 c
uncooked rice
1 medium
onion, chopped fine
1 clove
garlic, minced
salt and pepper to taste
1 lb
ground beef
2 can(s)
(14.5 oz.) stewed tomatoes, undrained
1 can(s)
cream of celery soup, undiluted
1 can(s)
(8 oz.) tomato sauce
1/2 tsp
oregano
1/2 to 1 tsp
chili powder

Step-By-Step

1Saute rice in oil until golden brown.
2Add onion, garlic, salt and pepper, and ground beef. Cook, stirring, until beef is browned and crumbly. Drain off grease.
3Add remaining ingredients and mix well. Transfer to a greased ovenproof casserole dish.
4Bake in a 350 F. oven for 1 hour, covering after the first 15 minutes.
