Ingredients For squash lasagna

1 lbyellow squash

1/4 cbread crumbs

1/4 cparmesan cheese, grated

1.5 ccottage cheese

1/2 cmonterey jack cheese, shredded

1.5 lbspaghetti sauce

1/2 lbItalian sausage, no casings

6 Tbspbutter
-
pinchpepper

1/2 tspsalt

1 lbzucchini
-
1 tspbutter, melted
How To Make squash lasagna

1Slice squash into 1/2-inch-thick pieces; sprinkle with salt and pepper.

2Saute squash in butter in a skillet over medium heat; drain and set aside.

3Add sausage to skillet; cook until browned, stirring until crumbly, then drain of excess fat.

4Add spaghetti sauce to meat; simmer until thickened, about 10 minutes.

5Layer half the vegetables, meat sauce, jack cheese and cottage cheese in a 12x7-inck baking dish; repeat layering, then top with parmesan cheese and bread crumbs mixed with melted butter.

6Bake in preheated 350 oven 30 to 35 minutes, or until bubbly.
