Ingredients For ratatouille with sauce

3 clovegarlic, finley grated

1/2 conions, chopped

3 Tbspolive oil
-
1 cgreen bell peppers, diced
-
2 1/2 lbeggplant,unpelled and diced
-
2 1/2 lbzucchini,sliced 1/4 inch
-
1 can28 oz crushed tomatoes,undrained
-
1 1/2 tspbasil, dried
-
1 1/2 tspitalian seasoning
-
1 1/2 tspsalt
-
1 lbmushrooms whole
-
1 1/2 lbitalian sausage (your choice sweet or hot)

8 ozswiss cheese,grated

black pepper, to taste
How To Make ratatouille with sauce

1Saute garlic and onions in oil until soft.

2Add green pepper,eggplant,zucchini;cook5 minutes over medium heat,tossing well.

3Add undrained tomatoes and seasonings. Simmer 15 minutes;cover and simmer 15 more minutes.

4Add mushrooms to vegetables during last 10 minutes of cooking time. Meanwhile, cook Italian sausage in skillet until done and drain well. (I like it in Crumbles some like it in slices. if in links I cut into slices after cooked.)

5Add sausage to vegetables; sprinkle with grated cheese. cover and simmer until cheese melts. Serve
