Another challenge in the Sammie group and it was to make a sandwich with carrots and olives. Well I LOVE olives and I knew it had to be a pizza, so this is what I came up with. Sweet & seasoned roasted carrots, 3 kinds of olives, onions and some bacon along with a little greek seasoning and 3 kinds of grated cheese. Gotta love olives to love this pizza! The combination of the sweet carrots and salty olives works well together. It's funny how the carrots end up looking like pepperoni too.

Ingredients For olive me pizza

  • ROASTING CARROTS IN A POCKET OF TINFOIL
  • 2 - 3 md
    carrots, sliced
  • freshly grated nutmeg
  • 2 - 3 Tbsp
    maple syrup
  • cinnamon, ground
  • COOK UP BACON
  • bacon or prosciutto then crumble
  • PREPARE PIZZA
  • refrigerated thin crust pizza dough
  • olive oil
  • greek seasonings
  • granulated garlic
  • 1/3 c
    small green olives with pimientos
  • 1/3 c
    small black olives
  • 1/3 c
    small burgundy pearl spicy ranchero
  • 2 - 3 Tbsp
    onions, diced
  • 1/2 - 3/4 c
    thinly sliced mushrooms, white
  • 2 - 3 md
    roasted carrots, sliced
  • 4 - 5 slice
    crisp, cooked bacon or proscuitto crumbled
  • provolone cheese, grated
  • 2 Tbsp
    parmesan and romano cheese, grated

How To Make olive me pizza

    Clean and slice up carrots. Place them in a piece of tin to wrap them up and then toss with cinnamon and after that drizzle with maple syrup. Close up tinfoil and place on a preheated oven at 400 degrees for 20 minutes. Check to see if tender and then remove and set aside.

    While carrots are cooking fry up your bacon, drain, cool and then crumble up and set aside. Next get your pizza dough out and spread onto press out on a pan. Then drizzle your olive oil and brush to coat the top of dough. Then add your greek seasoning. I just sprinkled it on top. Next put your carrots, olives, onions and bacon. Next grate your cheese on top however much you want and then top with the 2 tbsp of parm and romano cheese and cook your pizza according to directions.
