We love pizza in our family but living in rural Missouri the closest pizza joint is 45 minutes away. So I got this recipe from a magazine article. I make pizza once a week and you can also make Calzones with this recipe. I make it by hand or you can do this with a food processor or mixer as well.
In large bowl add water, yeast and sugar. Mix and let sit for 10 minutes until frothy. Add flour, salt and 2 tbs of olive oil. Mix until dough forms and comes together.
In another large mixing bowl or the same one just cleaned. Add i tbs of olive oil an with hand or pastry brush cover entire bowl. Toss dough ball in greased bowl until completely covered with oil. Cover bowl with plastic wrap or damp kitchen towel and let sit for 45 to 1 hour.
Dough should have doubled in size after 1 hour. On floured surface punch dough down and divide the dough in half. Knead dough balls until they are smooth. You can use right away or put in fridge in oiled bowl covered with plastic wrap.
