Gourmet Spaghetti - Part 3 - Tomato Sauce

Ingredients

TOMATO SAUCE

3 Tbsp
olive oil

carrots, chopped
2
celery stalks, chopped
1 large
yellow onion, chopped
1/2
green pepper, chopped
2 clove
garlic, crushed
3 c
canned tomato sauce
3/4 c
beef stock (1 1/2 teas. beef bouillion cubes with 3/4 cup water)
3/4 c
red wine
1 tsp
rosemary
1 tsp
basil
1 tsp
oregano
1/2 Tbsp
lemon peel, chopped
salt and pepper to taste

Directions Step-By-Step

Saute carrots, celery, onion, green pepper and garlic in oil until lightly colored. Add remaining ingredients. Simmer altogether, covered for 1 hr.
(For regular spaghetti sauce: Add 1 lb. hamburger and 2-3 links of Italian sausage)

Serve Gourmet Spaghetti over cooked spaghetti noodles and top with fresh shredded or grated parmesan cheese.
