I love Rachel Ray and I saw this recipe and I had to share, it was done in 30 minutes..Hello, I love that so much, before it took about and 1 hour or so. Not anymore.YAY!!!!

Ingredients For fake stuff eggplant

  • 1 lb
    ground lamb or beef (optional)
  • 5 sm
    eggplants
  • 3 Tbsp
    oil olive
  • 1 c
    bread crumbs
  • 1/3 c
    fresh parsley
  • 2 Tbsp
    butter
  • 1 c
    parmesan cheese
  • 1 tsp
    cumin ,g arlic powder

How To Make fake stuff eggplant

    Preheat oven to 375 F
  • 2
    Slice 4 eggplant in half , salt and pepper. Place them flesh down in a casserole dish pan with 2 tbsp of olive oil. For 20 minutes

    Meanwhile brown lamb, add chopped eggplant, cumin and garlic powder.

    In a small skillet place butter and crumbs in pan; cook until golden brown. Pull out eggplant from oven top each with lamb mixture, crumb and cheese.

    Return to oven to melt the cheese about 5 minutes. Check you oven and watch them.
