BAKED NOT FRIED EGGPLANT PARMESAN
I have been struggling to find a light and healthy recipe and have not been successful..so I played around and this is the result. This is truly low carb.. approx 7g per serving.
- 2 large
- eggplants peeled
- 2 c
- pasta sauce
- 1 pkg
- shredded part skim mazzarella cheese
- 1/2 c
- parmesan cheese, fat-free, shredded
1SPRAY BAKING SHEET WITH COOKING SPRAY. CUT EGGPLANT INTO 2 INCH SLICES. PLACE ON BAKING SHEET AND BAKE AT 375 FOR 10 MINUTES
2LAYER IN 8X8 BAKING PAN - 3 LAYERS OF EACH
3COVER AND BAKE AT 400 FOR 30 MINUTES. UNCOVER AND CONTINUE BAKING FOR 10 MINUTES.
