I went to the grocery store this morning and the smell of hot French bread caught my attention. I thought to myself, this would go perfectly with a bowl of tomato basil cream soup

Ingredients

2 c
roma tomatoes peeled/chopped
2 c
vine tomatoes peeled/chopped
1/2 c
basil chopped
1 c
heavy cream
2 Tbsp
salted sweet cream butter
2 c
vegetable juice
2 c
vegetable stock
salt and pepper to taste

Step-By-Step

1In a saucepan combine tomatoes, juice, and stock. Simmer for 30 mins and add basil.

2Use a hand-held blender in the saucepan to blend.

3Add cream and butter. Stirring over low heat until butter is melted. Remove from heat.

4Ladle soup into your favorite bowl. Garnish with basil and serve.
