This is recipe I got from a good friend that use to work with me. She was from New Orleans. We would have them for lunch at work and I would have to cook enough to fill up two crock pots. We had red beans and rice along with fresh french bread and fresh green onions. So good.

Ingredients For dewillia's red beans & rice

  • 1 pkg
    dried red beans
  • 1 lg
    green bell pepper, chopped
  • 2 lg
    onions peeled & quartered
  • 3 to 4 clove
    fresh garlic,chopped
  • 4
    stalks celery, chopped
  • 2 lg
    ham hock, smoked
  • salt & pepper

How To Make dewillia's red beans & rice

    Put all ingredients in pot and add lots of water to pot. You want quite a bit of liquid left when they are done. Simmer them approximated 4 to 5 hours until the beans are done. Add as much smoked sausage to your beans and let it cook. approximated 30 to 45 minutes.

    When sausage is done brown some flour with oil or bacon grease until it is good and brown. Add some of your bean liquid to it and then pour it in your pot of red beans. (DELICIOUS)

    SERVE WITH RICE, FRENCH BREAD, AND FRESH GREEN ONIONS. IT IS ALSO GOOD WITH MEXICAN CORN BREAD.
