Ingredients

  • 6 cups crunchy nut cereal (o's not flakes), crushed coarse (you can also use cap'n crunch cereal)
  • 2 1/2 cups heavy cream, cold
  • 3 x large eggs
  • 1/4 cup honey
  • 2 tablespoons sugar
  • 1 1/2 tablespoons pure vanilla extract
  • 1 tablespoon cinnamon, ground
  • 1/2 teaspoon salt
  • 1 loaf white bread, cut into 1" thick slices
  • 1/2 cup vegetable oil
  • SERVE WITH:
  • maple syrup
  • confectioners' sugar

How To Make crunchy french toast

  • Step 1
    Adjust oven rack to middle position, place rimmed baking sheet on rack & preheat oven to 450 degrees F. Set wire cooling rack inside second rimmed baking sheet. Place cereal in a 13"x 9" baking dish. Whisk cream, eggs, honey, sugar, extract, cinnamon & salt together in a large bowl until well combined.
  • Step 2
    Working with 2 slices of bread at a time, soak bread in cream mixture until just saturated, 15 seconds per side. Transfer soaked bread into cereal & press lightly to adhere; transfer to prepared wire rack. Repeat with all remaining bread.
  • Step 3
    Add oil to preheated sheet, tilting to coat evenly. Return sheet to oven & ehat until oil is smoking, 4 minutes. Carefully remove sheet from oven & arrange bread in even layer on sheet. Bake until exterior is golden brown & crunchy, 20 minutes, flipping once & rotating sheet halfway through baking time. Transfer toast to clean wire cooling rack & let cool 5 minutes. Serve with syrup & confectioners' sprinkled over top.
