Warm coleslaw w/ shrimp

- jumbo shrimp, peeled, deveined
- 8 slice
- thick-cut bacon, halved
- 1-1/2 lb
- bought coleslaw mix, w/out dressing.
- 1/4 c
- red wine vinegar
- 1/4 c
- finely chopped chives, fresh.
1In lg skillet, over med-high heat, cook bacon until crisp. Place on paper towels to drain. reserve drippings, returning 2 tbsp drippings to skillet.
2Add shrimp to skillet and cook, stirring until pink. Remove shrimp from pan. Add coleslaw mix to hot pan. Add 1-2 tbsp drippings to mix. Discard remaining drippings.
3Cook slaw mix, stirring over medium heat until slaw mix is wilted. Stir in vinegar and chives. Divide slaw mix onto 4 plates and top evenly w/ shrimp. Top evenly w/ bacon halves and serve.
