Tuna Melt w/Sun Dried Tomatoes & 12 Gr Bread

This is my entry for this week's Sandwiches, Sammiches & Sammies challenge.
I wanted something different, and this seemed to work for me! Wish I could say my husband liked it, but he refuses to eat tuna! I ate it & think it's a really neat idea!

tuna in water, drained (small)
egg whites, lightly beaten
1/2 tsp
coarse ground black pepper
1/4 c
finely chopped onion
1/2 tsp
mrs. dash fiesta lime seasoning
1/4 tsp
crushed red pepper flakes
1/2-3/4 c
seasoned bread crumbs
3 Tbsp
cheddar cheese, shredded

kraft mayonnaise w/olive oil
1/4 c
sun dried tomatoes, dry packed, chopped
4 slice
12-grain bread
red leaf lettuce
12 slice
dill pickle chips

Directions Step-By-Step

Drain water off tuna and flake with fork, breaking up any chunks.
In medium bowl, beat the egg whites until they are just starting to get bubbly; stir in tuna, bread crumbs (start with 1/2 c, add more as needed to bind it). Blend in 1/4 tsp. crushed red pepper, black pepper, Mrs. Dash and onion. Stir well, then form into two patties sized to fit bread slices.
Cook in nonstick skillet, sprayed w/Pam, until golden on both sides. Then, sprinkle the cheese over patties and cover w/lid or foil until cheese melts (about 2 min).
Combine mayonnaise, 1/4 tsp. crushed red pepper flakes and chopped sun dried tomatoes. Stir well to blend. Evenly divide between all 4 slices of bread, spreading to cover.
Arrange lettuce over dressing on two slices, add tuna patties, then top with pickle slices.
Cut sandwiches in half and enjoy! There is a tang to the sauce, but it isn't really hot.
