Ingredients

3-4 Tbsp olive oil
3/4 c chopped celery
2 Tbsp light cream cheese
2 tsp lemon juice
1/3 c dry bread crumbs
1 tsp dill
pinch of black pepper
9 1/4 oz can tuna ( of course you could use canned salmon etc) and you can use the darker meat tuna as well
1 egg white, lightly beaten
Pinched by tabhop, and 128 more.

Carol's Notes:

Inexpensive and easy to make ! Always liked these for a busy day with not much in the house to make for dinner with beans and baked fries ~ Also you don't need to buy the all white tuna which is more expensive the darker tuna just adds more flavor to them. Enjoy!

Directions

Saute celery in 1 Tablespoon oil for 2-3 minutes.

Remove from the heat and add remaining ingdredients.

Divide into four cakes. Saute two minutes each side in remaining oil, until golden brown.

Serve with tarter sauce.

Your welcome and yea it would be good for cooking for two group, makes a small amount and fairly inexpensive and always have some in the cupboard. Thanks for sharing Pat !

Sounds and looks a lot like my Salmon cake recipe....I've been so busy browsing and 'pinching' I have yet to submit recipes but hope to find time to do so this weekend!!! :)

It probably is like your Salmon cakes and I mentioned that in the recipe as well ~ it is an old old recipe I remember my Mom making them on Friday nights when we couldn't eat meat, we are Catholics, and thats the way it was back then. My mom has passed over 33 years ago, so yea it is an old one, but just thought maybe there is someone that has never even heard of it.

Thanks, Carol. I will try these. We are Catholic too but all we ever had on Friday was Mac and Cheese or Tuna Noodle casserole. I will not eat Tuna Noodle casserole to this day. But I will try your tuna cakes.
