for the fish sauce. in a med pan simmer walnuts,and garlic in 1/2 stick of butter. Remove from heat and add the other 1/2 stick of butter and 1/4 cup of wine or beer. replace on very low heat to keep warm.If sauce gets to thick,add a little beer or wine. I use wine.
For the fish sprinkle trout with a pinch of salt & pepper. Sgueeze a little lemon juice on each trout. Place in fish grilling basket,close basket. Grill for 10-15 min Till flakey. On med-high heat.
I place trout on rice dreadge with some of the warm fish sauce.
