Ingredients For tilapia with tomato-orange relish

6tilapia fillets (6 oz. each)

3 Tbspbutter, melted
-
1/2 tspsalt, divided
-
1/2 tsplemon pepper
-
1 mdtomato, seeded & chopped
-
1 mdorange, peeled, sectioned & chopped

1/3 cred onion, finely chopped
-
1 Tbspcapers (optional - i don't use them)

1 1/2 Tbspbrown sugar, firmly packed

1 Tbspred wine vinegar
How To Make tilapia with tomato-orange relish

1Preheat oven to 425 degrees F.

2Place fish in a greased 15" x 10" x 1" baking pan. drizzle with butter; sprinkle with 1/4 tsp salt & the lemon pepper. Bake for 10 minutes or until fish flakes easily with a fork.

3In a small bowl, combine tomato, orange, capers (if using), brown sugar, vinegar & remaining salt. Serve on top of fish.
