Ingredients For tilapia with tomato-orange relish

  • 6
    tilapia fillets (6 oz. each)
  • 3 Tbsp
    butter, melted
  • 1/2 tsp
    salt, divided
  • 1/2 tsp
    lemon pepper
  • 1 md
    tomato, seeded & chopped
  • 1 md
    orange, peeled, sectioned & chopped
  • 1/3 c
    red onion, finely chopped
  • 1 Tbsp
    capers (optional - i don't use them)
  • 1 1/2 Tbsp
    brown sugar, firmly packed
  • 1 Tbsp
    red wine vinegar

How To Make tilapia with tomato-orange relish

    Preheat oven to 425 degrees F.

    Place fish in a greased 15" x 10" x 1" baking pan. drizzle with butter; sprinkle with 1/4 tsp salt & the lemon pepper. Bake for 10 minutes or until fish flakes easily with a fork.

    In a small bowl, combine tomato, orange, capers (if using), brown sugar, vinegar & remaining salt. Serve on top of fish.
