I got this recipe from a friend in Santa Cruz, CA. Its really delicious and diffrent. And the best part is its easy to make.

Ingredients

1 c
fresh medium or hot salsa (from the deli section at your grocery)
1 c
fresh or frozen peaches, drained and diced
1 lb
cooked medium shrimp, peeled and de-veined
1 Tbsp
fresh cilantro, finely chopped
1 c
chopped lettuce (use a variety of types of lettuce if possible)

warm corn tortillas

Directions Step-By-Step

Combine salsa and peaches in a large skillet. Cook over medium heat until heated through. Add shrimp and cilantro. Continue cooking until shrimp is hot.

Divide lettuce into 6 equal portions. Place 1 portion in the center of each tortilla. Next put a scant 1/2 cup of shrimp mixture on top of lettuce. Fold tortillas and serve immediately.
