Ingredients For southwest planked salmon

1 lbsalmon
-
1 Tbspolive oil, extra virgin

1/4 cbutter
-
5 clovegarlic, minced
-
1/4 tspcumin
-
1 1/2 tspchili powder
-
1/4 tspsalt
-
1/2 cwhite wine
-
1cedar grilling plank
How To Make southwest planked salmon

1Cook all ingredients (except wine & salmon) over medium heat for 3 - 4 minutes, set aside for a few minutes, then mix in wine. Cool to room temperature.

2Place salmon in marinade, cover with plastic wrap & refrigerate 8 hours or overnight.

3Soak cedar planks in water for at least 2 hours or overnight.

4Place planks directly on the grill over medium low - medium heat & close the grill lid. When plank begins to smoke, place marinated salmon on the plank, close the lid & grill until cooked through, about 10 - 12 minutes. NOTE: If the edges of the plank catch fire, spray with water.
