Colleen's Story

Smelt are tiny little fish. There use to be a place in the town I grew up in that had a "SMELT FRY" on Friday nights....

This is an old family recipe from the Sullivan side of the family that has been passed down over the generations.

This brings back memories!

*** You can clean the smelt and freeze them for future use, then just thaw them the night before you want to use them up.
This is not my photo, but one I got from the internet.

2 lb
fresh smelt (clean, remove bladders, wash)
1 tsp
2 large
eggs (beaten)
1/4 tsp
cayenne pepper
1 tsp
ground black pepper
3 c
fine bread crumbs
inches of oil

Directions Step-By-Step

Clean the fish, remove bladders and wash.
Heat oil to 375 degrees.
Beat the eggs and set aside until needed.
Prepare the bread crumb mixture
Fry until golden brown (just a couple of minutes). Remove from oil to paper towel lined platter.
*** Serve with potato salad, cole slaw, baked beans, french fries or baked potato. Garnish with lemon wedges and parsley.

Ohhhhhhh, does this bring back memories!!!!!!! I can remember as a kid going smelting with my dad.
We use to go down along Lake Ontario just west of Sodus Point in Maxwell Creek to do smelting at night.
One time the water was swifter than I could stand in with a net full of smelt. The guys had to grab me and pull me out. I wouldn't let go of the net! Boy these are sooooooo good, your picture makes my mouth water!!!!!! Good job Colleen!!!!!

Hi Goldie and Diane! So happy this recipe stirred up some memories for you both! It brought back memories for me too.... My brothers use to love Smelt Fry nights.... When we were grown up, we use to go to Kellogg's Bar on Friday nights, we would dance to songs on the jutebox and socialize with friends until our dinner orders were ready.... I loved to dance, I was lucky to have older brothers who loved to dance.... and they taught me well! lol

The photo is nice... it is one I found on the internet... thanks again girls!

Memories yes. My Dad and brother and I used to go to Lake Michigan in April to go smelt fishing when I was a kid. It was soooo cold I spent most of the time in the car! One time he made them with the heads on and my sweet wonderful Grandma was too polite to not eat them. She did'nt even like fish! Of course I complained! I was so grossed out. You know they definetly taste better with the heads removed! Thanks Colleen.
