Ingredients For shrimp tacos

  • 1/2 c
    sour cream
  • 2 Tbsp
    cilantro, fresh
  • 1 tsp
    canola oil
  • 1 1/4 lb
    medium shrimp, peeled, deveined & tails off
  • 1/2 tsp
    chili powder
  • 1/2 tsp
    cumin
  • 4 clove
    garlic, minced
  • 8 - 6"
    corn tortillas
  • 2 c
    romaine lettuce leaves, shredded
  • salsa
  • 2 Tbsp
    black olives, sliced
  • 2
    avocados, sliced
  • cheddar cheese, shredded

How To Make shrimp tacos

    In small bowl, stir together sour cream & cilantro. Cover; refrigerate until ready to use. In large non stick skillet, heat oil over medium high heat; swirling to coat bottom. Add shrimp.

    In small bowl, combine chili powder, cumin & garlic; mix well. Sprinkle on shrimp. Cook 3 - 4 minutes if using large shrimp or 2 - 3 minutes if using small or until shrimp are pink on outside, stirring occasionally. Remove from heat.

    Following package directions, warm tortillas. Put tortillas on flat surface. Sprinkle with lettuce, salsa, olives, cheese & sliced avocado. Spoon sour cream mixture on each. top with shrimp. Fold two opposite sides of tortilla toward center.

    DRAMATIC PRESENTATION: For each serving, place 2 unfolded taco side by side on a dinner plate. Fold each in 1/2. Push 6" wooden skewers through both tacos near tops to hold them together. Remove skewers before eating tacos.
