There is this store in Highlands, NC that I ABSOLUTELY LOVE, LOVE, LOVE! Colonel Mustards is what it's called. They don't have a website, but here is what I could find ( http://www.yelp.com/biz/colonel-mustards-highlands ). It is a specialty shop that has all sorts of sauces, nuts, honey butter, condiments, etc. Plus, they have samples of EVERYTHING so that you can taste it before you buy it! That is where I picked up this recipe...

Ingredients For sea scallops w/ wasabi mustard sauce

24 lgsea scallops
-
1/4 cstonewall kitchen wasabi mustard
-
1/8 cstonewall kitchen maine maple champagne mustard

1 cheavy cream
-
1/2 stickbutter
-
1 Tbspstonewall kitchen roasted garlic oil
-
1shallot, minced
-
2 ozprosciutto, diced
-
2 Tbspchives, dried
-
2 Tbspparsley
-
salt & pepper, to taste
How To Make sea scallops w/ wasabi mustard sauce

1In a food processor, pulse diced proscuitto into a fine dice.

2Melt butter & roasted garlic oil over low medium heat in a large sauté pan.

3Drain scallops & sautéed in pan until golden.

4Remove scallops from the pan & tent with aluminum foil to keep warm.

5Into the same pan, add shallot & sauté until opaque, using additional oil, if necessary.

6And both mustards & stir for about 30 seconds.

7Slowly whisk in heavy cream into the mustard mixture.

8When blended, a add proscuitto & scallops, including accumulated juices.

9Warm through gently. Adjust seasoning & serve, garnish with parsley & chives.
